I have been on a huge omelet kick here the last few weeks, so yesterday I bought all sorts of veggies to make an omelet with.
I sauted up some mushrooms, zucchini, bell peppers, and grape tomatoes — of course I sauted it all in some olive oil (gotta get my healthy oils in :) ).
The only thing else I added, besides the egg subsitute, was some muenster cheese. Yum Yum!!
A great healthy breakfast! Plus I made one for Daniel, so some fun sibling bonding over a healthy breakfast.
